Production Area: Solferino.
Exposure: North/south, excellent exposure to sun, good temperature variation, typical microclimate perfect for this vine variety.
Soil: Morainic origin with skeleton presence. The terrains of this area are rich in clay, with good fertility and a natural as well as important presence of micro elements that are beneficial for the vine. The structure of the soil, combined with its water balance, create an interesting area for vine cultivation.
System of Vine Cultivation: Guyot
Grape Harvest: harvest by hand in boxes with careful manual selection of bunches. End of August with healthy grapes.
Production: 100 QL for ha
healthy grapes are harvested by hand when it established the right balance between sugar
content and acidity. After this, healthy grapes are put in boxes and kept in a cold storage for 24 hours. In this way we can obtain a cold maceration to transferring homogeneously all the fragrant aromas from the skin to the flesh. The grapes are destemmed and then gently pressed to obtain the separation of the “must flower” from the marc. Through the subsequent cleaning process of the must we carry out the natural and cold static decantation. The decanted must ferments in steel tanks with temperature – controlled 13 -15 ⁰c. Afterwards, the lees on the skin activated the alcoholic fermentation that will characterize the particularities of the wine and the vineyard origin balances then from a choice of carefully selected yeasts from us.
It’s a primary step in the evolution of wine because it allows the oenologist to highlight the
advantages of his product and to increase its stability over time. It is performed exclusively in small steel tanks to preserve aromas and freshness of the wine. The wine matures in yeasts for approximately 4 months. We are concerned about this process using the oneologist technique of BATONNAGE. This process ends with the refinement in bottle for at least one month and the following marketing.

the wine is pale yellow in colour. Pure wine is made with Chardonnay grapes, it’s a wine of full body, it’s rich and fruity, mildly alcoholic with a good balance between sweetness and acidity, enveloping with a balanced freshness and with a long and persistent aftertaste. Intense nose with fruity and traces of floreal notes.
excellent as an aperitif, ideal as a wine for meal times as it can be
matched perfectly with main dishes: risotto, white meat as rabbit and chicken grilled. Enjoyable also with cheeses, seafood dishes. A Perfect combination for an aperitif together.
