Vine Variety: Merlot 100%
Production Area: Solferino.
Exposure: North/south, excellent exposure to sun, good temperature variation, typical microclimate perfect for this vine variety.
Soil: Morainic origin with skeleton presence. The terrains of this area are rich in clay, with good fertility and a natural as well as important presence of micro elements that are beneficial for the vine. The structure of the soil, combined with its water balance, create an interesting area for vine cultivation.
System of Vine Cultivation: Guyot
Grape Harvest: harvest by hand in boxes. End of September with healthy and ripe grapes.
Production: 90 QL for ha
Winemaking:
the grapes are harvested by hand when the bunches are fully ripen. The grapes are destammed, gently pressed with full respect for the integrity of the berry. Subsequently the grapes are submitted to alcoholic maceration in small steel tanks at controlled temperature 24-26 ⁰c. Completed the fermentation, skins of grape berries shall be effected from the wine.
Refinement:
It’s carried out in steel tanks and later in bottle before being sold.

ORGANOLEPTIC CHARACTERISTICS
It’s a ruby red coloured with violet tints wine. The nose features the typical varietal notes of the vine and it expresses sensational red fruit aromas. The palat is fruity with good freshness and softness. Full-bodied and structured wine. This wine tends to blend harmoniously giving balance and finesse on the palate. Persistent wine that leaves memories consistent with the olfactory sensations. In the mouth tannins are rich but velvety. The herbaceous and earthy flavors create a layered structure interspersed with a pleasant you won’t forget so easily.
Combinations/Food Pairing:
Versatile wine when maching with food, characteristic of red bodied
wines. It goes well with appetizers of raw meats, first dishes with meat sauce, roasts, small game, medium and mature cheeses. It’s also indicated as a “meditation wine”.
