healthy grapes are harvested by hand when it established the right balance between sugar
content and acidity. After this, healthy grapes are put in boxes and kept in a cold storage for 24 hours. In this way we can obtain a cold maceration to transferring homogeneously all the fragrant aromas from the skin to the flesh. The grapes are destemmed and then gently pressed to obtain the separation of the “must flower” from the marc. Through the subsequent cleaning process of the must we carry out the natural and cold static decantation. The decanted must ferments in steel tanks with temperature – controlled 13 -15 ⁰c.
Afterwards, the lees on the skin activated the alcoholic fermentation that will characterize the
particularities of the wine and the vineyard origin balances then from a choice of carefully selected yeasts from us.
It’s a primary step in the evolution of wine because it allows the oenologist to highlight the
advantages of his product and to increase its stability over time. It is performed exclusively in small steel tanks to preserve aromas and freshness of the wine. The wine matures in yeasts for approximately 4 months. We are concerned about this process using the oneologist technique of BATONNAGE.
Secondary Fermentation: Method charmat
transparent and bright wine. The nose features with green apple and lemon aromas. This wine has floreal notes and a good balance between sweetness and acidity that give it a unique, fresh and fragrant taste. Everything is balance with a particular flavor and a not excessive softness.
It’s a sparkling light wine, the sum of its constituents makes this wine dry
and good to each meal. It fit curious and innovative maching with pizza.
